How would you rank the best segments to sell in? SMB, Growth, MM, ENT, Strategic, etc

This is a completely subjective question and completely depends on how you sell, who you sell to, what you want your desired selling motion to be, frequency and deal sizes, complexity of deals etc. As you move up market you will deal with larger more complex deals with additional internal and external stakeholders. There is more money to be made up market but if you are looking to learn on a more transactional basis then SMB or Growth may be a better fit.

Yea really depends but from what I have seen in the past, SMB and Growth has the most of reps making money compared to MM and ENT where it is feast or famine.

Your vertical and territory play a huge factor as well

Totallly depends on your patch of accounts, within an industry, territory, product specialisation. Salesforce almost doesn't acquire new customers anymore in some segments / territory. And you won't have the time or resources to make prospection cause Salesforce expect you close deals rapidly, and that mean squeezing your install base rather than having a long term approach. So you have a poor patch, you are going to struggle. You are a mature set of accounts, organic growth or good product adoption, good for you.

I was in Strategic and loved it - the deal size, complexity, level of required resources/teams you could muster for top deals.  It's not for everyone, much more velocity on smaller companies - which for some folks is nice. I like winning as a team, and mobilizing lots of talent to close top opportunities, so ENT/Strategic were my favorite.
